October & November Scarves

Color:  Grey Mist.  Stitched vertically.  Half-Double crochet.  Last row was Five Double crochet Shells.
So...any time I stitch a scarf vertically the first row is tight and causes the scarf to curve.  So to make it look like I meant to make the scarf funky, I added a funky edge to it.  I like the funkiness of the scalloped edge.

Plain old Half-Double crochet scarves in Coffee and Grey Mist.  Stitched horizontally.

Peanut Butter Banana Sandwich

I'm not a big fan of banana sandwiches but this one is great!  It's another recipe from the book So Easy by Ellie Krieger.  The recipe calls for whole wheat bread wraps.  I guess Ellie means flat bread?  I wasn't sure so I just picked up whole wheat sandwich bread thins.  You spread peanut butter, line up slices of banana, add some chopped pitted dates, and sprinkle with cinnamon.  I even made two so I can have one for breakfast!

Spinach-Cheese Tortellini Soup

Last week, I tried a recipe from the cookbook So Easy by Ellie Krieger.  It turned out great!  I may cut back on the red pepper flakes.  I enjoy spicy stuff but this soup turned out a little spicier than expected.  It's a great soup for winter time, freezes well, and reheats deliciously.
*changes:  used baby carrots since I had them on hand & could only find frozen cheese tortellini

The Moon is Down

Listened to this song on my drive home from church tonight.  Windows down. The song immediately caught me...I said to myself 'this is my song'. I think this would be the soundtrack to the past 6 years, my transition from Montgomery to Bham, the loss of the past, and getting to know myself all over again. It's funny...the song is titled The Moon is Down.  Cindy (or cynthia) is the Greek goddess of the Moon. I've been down 'emotionally' for the past 6 years. The Moon is Down.  perfect.

Chili-Mac

http://allrecipes.com/Recipe/Chili-Mac/Detail.aspx

I made my first chili-mac tonight.  And it was awesome!  I didn't grow up eating chili-mac but I remember this being a staple in public school & college lunch menus growing up.  I was worried it wasn't going to be very exciting but this recipe is awesome.  I will definitely be making this again!

Replacements:  ground turkey, whole wheat pasta, organic italian diced tomatoes (store didn't have organic cans of chili or mexican style), added a couple of dashes of red pepper flakes to the mix.

Friday night, Jason, James, Pam and I attempted to make chicken Pad Thai. I think we did a great job for such a different cooking choice. We had to add some extra fish sauce-white wine vinegar-sugar because the dish was getting a little dry during the last five minutes of cooking. Plus, tensions were a little high since we were all new to this recipe. But in the end I think we did an awesome job. I think I'll try this recipe again in the next couple of weeks and try to perfect it. And after you make the initial purchase of the fish sauce and vinegar this recipe is very inexpensive to make. Plus, I had so much fun going to the local Asian Market to buy the noodles that I even bought chopsticks for us to eat with!

Organics/All-Natural: Laundry Detergent

I'm excited to try my first bottle of Seventh Generation laundry detergent today. It's usually a little pricey but I had a coupon. :) If it turns out doing well I may switch to this detergent permanently. It feels good to be looking after God's creation by using healthier and safer products.

Getting Back To Cooking and Blogging

I tried out two new recipes tonight. It's been forever since I've really cooked. Sometimes you just get in a slump of grilled ham&cheese sandwiches and soup for dinner. But tonight was an exception.

Earth Day

Happy Earth Day! For me, it's a day to celebrate God and his creation. Try doing something good for the earth today. Pick up a piece of litter or buy an organic item. Do something simple to take care of God's canvas which is the earth.

I finally finished my first hat after putting down the crochet needle for a month or so. I still haven't gone to my Dad's to pick up my camera so I continue to neglect this blog site. But here are some pics of my hat using my mac's camera. I actually like the hat unfolded rastafari style. Next time I think I'll make it smaller so there won't be so much fabric hanging on the backside.

Neglect and then some...

Oh blog....how I miss you. I am sorry for neglecting you and leaving my camera at my Dad's house for months on end. Till this w'end when I can get back to updating you I will share some treats I have been enjoying lately. I've been feeling real "hoyty-toyty" and all-natural this week......so I purchased these goodies at World Market/Publix/Whole Foods.

Quote of the week: (created my Jason and Cindy during their car ride after trips to Whole Foods and World Market)......"I'm so organic I fart rainbows!"
